Thymiopoulos has been growing grapes in the village of Trilofos in Northern mainland Greece for generations. However it wasn’t until Apostolos Thymiopoulos took over the reigns in the 2000’s that they started to vinify their own wines. The vineyards are relatively cool climate located in the foothills of foothills of Vermio mountain and nearly all the wine is made from a single variety, Xinomavro. As a result expect more sculpted, cooler climate reds almost akin to a Greek Nebbiolo.
Since taking over Apostolos initiated low intervention techniques in the vineyard and the cellar; they farm organically and biodynamically and only use small amounts of sulphur at the bottling stage.
